Pea, pesto and parmesan soup to warm you up this season!
I'll be honest, I'm not one for following recipes in my kitchen, I'm a 'what's in the fridge, lets throw those together' kinda' gal. Now on this occasion - if I don say so myself, things came together quite nicely!
Pair with a pear and a crunch of pepper for some extra Ps! 🤩
The Recipe (ish)
Fry off some onion, celery and courgette for your nice green base! I added some garlic and dried herbs in at this point too...
Add to a saucepan (or I used a slow cooker) with a decent glugg (enough to cover the vgg - sorry I'm not great at measurements either!) with one or two veggie stock cubes and a cup or two of frozen peas.
Once this has all cooked up and 'soup-ified' blend it with a stick blender until it's nice and smooth and soup-like. At this point add in some green pesto - I had a bout 3/4 of a jar left in the fridge and scooped it all in!
Add in an extra cup or two of frozen peas (which remain un-blended) for some bonus pea-texture.
When it's all lovely and warm and stirred through, swerve with a generous pinch of black pepper, and an even 'generouser' grating of parmesan cheese - warm crusty bread very much advised too.
